Potato starch flour (local Indonesian), is flour extracted from potatoes. Cells from the tuber roots of potato plants contain starchy granules (leuklopas). To extract the starch, the potato is crushed, the starch grains are removed from the crushed cells. The flour is then washed and dried into powder.
