Potato starch (local indonesia), is a flour extracted from potatoes. Cells from the root tubers of the potato plant contain starch granules (leukopas). To extract the starch, the potatoes are crushed, the starch granules are removed from the crushed cells. The flour is then washed and dried into a powder.
